Claudio Mariotto 'Bricco San Michele' Timorasso Bianco Colli Tortonesi, 2019 trimbach this deep golden wine boastsThis wine is made of 100% Timorasso, from Claudio Mariotto's youngest vines. We would pair it with a pasta dish from its more northerly neighbor in the Dolomites, called Pizzocheri. Pizzocheri is an Italian buckwheat pasta combined with potatoes, cabbage and lots of gooey Valtellina Casera cheese. Derthona Timorasso is a small DOC in Piedmont, Italy, and is seeing a revival, after the Timorasso grape almost went extinct. The wines of Derthona have a
